My Newest Favorite Appliance


I recently acquired a new gadget for the kitchen that has completely taken over my counter top. Not in a bad way mind you. I accept it, even welcome it. You see I now have the best appliance I have ever owned. I know, I know, you're all thinking "That's a pretty bold statement.", and you're right, it is.


Before I share with you this breakthrough in kitchen gadgetry let me share with you some of the things I've done with it. Here is a small sampling:

Scallop, Clam and Corn Chowder

Chicken Noodle Soup

Rice Pilaf

Red Beans and Rice

Hot Chocolate

Hot Dogs

Steamed Vegetables

Rice (Brown and White)

Just to name a few.

Let me start off by saying this is not an advertisement, I have received nothing for this endorsement, and I would recommend it to everyone. I have had this thing sitting on my counter for months, (I got it for Christmas). But in return for keeping this appliance on my counter, I no longer have my old rice cooker or my slow cooker. That's a two for one exchange. And the two I got rid of took up a lot more space than this one. It is also easier to clean than my previous models.

Everything I have cooked in it has come out perfect. I would like to say that's because I'm the best cook in the world but I don't think that would be fair to my rice cooker plus. Besides I tell my kids not to lie so I should lead by example. I am, however, the best cook in the world with a rice cooker plus.


Ok, enough about the rice cooker plus (with Fuzzy Logic). For being such a gracious audience I am going to leave you all with this parting gift. The following is the recipe for one of the tastiest, easiest seafood chowders you will ever eat. And yes it is even easier if you have the rice cooker plus.

Daddy's Scallop, Clam and Corn Chowder

Ingredients:

½ lb. bacon

1 large leek, thinly sliced

3 cloves chopped garlic

1 cup frozen kernel corn

1 ½ lbs. peeled potatoes cut into ½ inch cubes

2- 6.5 oz. cans chopped clams in clam juice

1 cup heavy whipping cream

1 lb. bay scallops

¼ cup chopped parsley

Salt and Pepper to Taste


Preparation:

Coarsely chop bacon and cook in large pot until brown and crisp.

Remove bacon to paper towel to drain, pour off about two thirds of the pan drippings.

Saut̩ leek, garlic and thyme in remaining oil until leeks soften, about 3 Р4 mins.

Add corn, potatoes, clams in juice, and cream; bring to a boil.

Reduce heat and simmer about 10 – 15 mins. until potatoes are tender.

Add Scallops and bacon and simmer another 5 – 10 mins. until scallops are opaque in center.

Season to taste with salt and pepper, ladle into bowls and top with chopped parsley.
