Zucchini Boats

Serves : 4 as side dish, 2 as entrée

Time: 30 mins

Bake: 8 mins

Ingredients:


2

Zucchini

1 Medium

Red Onion

10 oz. pkg

Frozen Spinach

1 Cup

Italian Bread Crumbs

¼ Cup 

Grated Parmesan Cheese

Salt and Pepper

 

To Taste

3 TBS

Olive Oil

Directions:


Pre-Heat oven to 450°.

Defrost frozen spinach and drain.  In a sauté pan, cook onions in olive oil until soft, about 3 minutes.  Add spinach, salt and pepper, cook on low heat until mixture is hot, about 5 minutes.  Remove mixture from heat, stir in bread crumbs, Set aside.

Halve the zucchini’s and scoop out the flesh in the center, leaving about ½ inch thickness around.  Put zucchini halves in pan, cover with water and bring to a boil.  Boil zucchini for 2-3 minutes to soften.

Place cooked zucchini halves in baking dish, scoop spinach mixture into zucchini (boats).  Sprinkle stuffed zucchini boats with Parmesan, and bake in 450° oven for 8 minutes.
